Winemaker's Tasting Notes
Our 2004 Cabernet Sauvignon begins with complex aromas of black cherry, juniper berry, licorice and mocha spice. The palate is smooth and full bodied, with layered flavors of black currant, plum and cassis. The mocha accents return on a long finish, accompanied by lingering fruit and supple tannins.

Winemaking
The 2004 growing season began with a warm spring and concluded with a moderate autumn, offering considerable hang time for balanced flavor and tannin development. The Cabernet Sauvignon grapes were harvested at the Firestone estate and select neighboring vineyards during the third week of October. Extended maceration was employed for a total of 28 days of skin contact. The wine was aged for 21 months in French oak barrels, inclusive of 50 percent new oak. A small contribution of Syrah was added to the final blend to enhance the fruit profile and round out the texture.

The restrained elegance of our 2004 Cabernet Sauvignon ensures versatility with food. Recommended pairings include beef tenderloin with mushroom gravy, pasta Bolognese, roasted rack of lamb with rosemary, and grilled veal chops with olives and sage.
