2003 CABERNET SAUVIGNON VINEYARD SELECT - Central Coast

Tasting Notes
Our 2003 Cabernet Sauvignon begins with complex aromas of cherry and cassis with notes of chocolate, cola and anise. Ripe flavors of plum and black cherry unfold with accents of vanilla across a smooth, balanced texture. Supple tannins accompany a long finish.

Winegrowing Notes
The majority of our 2003 Cabernet Sauvignon hails from Paso Robles, where a combination of warm, sunny afternoons and cool coastal nights is ideal for maturing Cabernet Sauvignon to optimal ripeness, structure and flavor.

Winemaking Notes
The grapes were harvested by hand, then destemmed and lightly crushed. Fermentation was followed by extended maceration for a total of 21 days of skin contact. The wine was then racked to a combination of French and American oak barrels, where it aged for 16 months.

Cuisine Pairing
The rich, layered flavors of our 2003 Cabernet Sauvignon are a perfect complement to grilled red meats, hearty pastas and flavorful cheeses. This wine also pairs well with dark chocolate and related desserts.
