Winemaker's Tasting Notes
Our 2004 Merlot boasts a complex bouquet of cherry, mocha, and nutmeg spice. The palate is round and soft, with supple flavors of black cherry, plum and vanilla. The finish is long and balanced, with finely textured tannins that add longevity to the wine.

Winemaking
The 2004 Merlot hails primarily from the Firestone Vineyard estate with small contributions from nearby vineyards, including Adam Firestone’s Rock Hollow Vineyard. The growing season got off to a fast start in the wake of warm March temperatures. Mild fall temperatures slowed the pace of ripening, however, and the separate blocks were picked over a four-week period as each reached peak maturity. The last block was harvested on October 22.  Extended maceration was employed for a total of 28 days of skin contact. The wine was aged for 21 months in French oak barrels, 50 percent of which consisted of new oak. A small contribution of Cabernet Franc was added to the final blend for an enhanced structure and tannin profile.

Cuisine Pairing
The deep, supple fruit flavors of our 2004 Merlot pair nicely will full-flavored fare such as filet mignon with wild mushrooms, roast pork tenderloin and lamb-stuffed eggplant. This wine also appeals to dark chocolate desserts and hard cheeses such as Parmesan and Romano.
