Our 2005 Cabernet Sauvignon begins with elegant aromas of boysenberry and juniper berry with a hint of pencil shaving. Sleek flavors cassis and black currant unfold with nuances of mint and mocha. The texture is deep and elegant, finishing with smooth, supple tannins.

Winemaking
The 2005 Cabernet Sauvignon hails primarily from the Firestone Vineyard estate with small contributions from nearby vineyards, including Adam Firestone’s Rock Hollow Vineyard. Rainfall was above average in the winter of 2005, propelling a healthy start to the growing season. A temperate spring ensured an excellent fruit set, and warm July temperatures aided vine stress and vigor control. Moderate fall temperatures lengthened hang time, and the last grapes were harvested in early November. Extended maceration was employed for a total of 28 days of skin contact. The wine was aged for 21 months in French oak barrels, inclusive of 50 percent new oak. Small contributions of Merlot and Cabernet Franc were added to the final blend for enhanced structure and complexity.

The deep, elegant flavors of the 2005 Cabernet Sauvignon are a particularly fine match for grilled pork chops with fresh herbs, beef tenderloin in mushroom gravy, roasted rack of lamb with rosemary parmesan crust, and grilled portabella mushroom.
