Our 2005 Chardonnay starts with integrated aromas of citrus, butterscotch and toasty vanilla. Luscious tropical fruit flavors unfold with accents of crisp apple and caramel. The texture is focused and fresh, finishing with brisk acidity.

Winemaking
We sourced Chardonnay from the neighboring Santa Maria Valley and from our own estate in the Santa Ynez Valley in order to craft a wine of dimension and complexity. After light crushing, pressing and cold settling, the juice was fermented in a combination of French oak barrels and stainless steel tanks. A slow-fermenting yeast was employed to enhance textual and aromatic complexity. The wine was aged sur lie for nine months in French oak barrels.
Cuisine Pairing
The rich flavors and vivid natural acidity of the 2005 Chardonnay ensure excellent versatility with cuisine. Recommended pairings include sautéed halibut, steamed clams, gnocchi with butter and sage, and roast chicken with lemon and herbs.
