Tasting Notes
Our 2004 Cabernet Sauvignon offers ripe aromas of cherry and cassis with accents of black licorice. The mouthfeel is round and seamless, with flavors of black cherry, plum, coffee and mocha. A long, even finish reveals fine tannins with a hint of spice.
Winegrowing Notes
The majority of our 2004 Cabernet Sauvignon hails from Paso Robles, where a combination of warm, sunny afternoons and cool coastal nights is ideal for maturing Cabernet Sauvignon to optimal ripeness, structure and flavor. The remainder comes from the Santa Ynez Valley, which boasts similarly favorable conditions for the varietal.
Winemaking Notes
The grapes were harvested by hand, then destemmed and lightly crushed. Fermentation was followed by extended maceration for a total of 21 days of skin contact. The wine was then racked to a combination of French and American oak barrels, where it aged for 20 months for optimal tannin integration.
Cuisine Pairing
The ripe, round flavors of our 2004 Cabernet Sauvignon are a great match for char broiled flatiron steak, grilled gourmet hamburgers, hearty pastas in red sauce, and flavorful cheeses such as aged gouda. This wine also pairs well with dark chocolate and related desserts.
