Tasting Notes
This Chairman Series wine is made from our best Cabernet Sauvignon block on the estate. It is a bold wine with layers of graphite, blueberry compote, and cassis fruit on the nose. The elegant tannin structure is complemented by abundant plum and blueberry flavors, with a complex finish consisting of espresso and black olive. This wine pairs well with prime or short rib, roast beef, venison or pasta dishes with dark meat-based sauces.

The grapes for this wine come from a vineyard on our estate in Santa Ynez Valley. Situated at 1,000-foot elevation, this hillside vineyard is comprised of rocky, sandy, alluvial soil on the edge of a plateau, ideal soil for growing our Cabernet Sauvignon because of its permeable qualities. During the growing season, the fog sits right on top of our vineyards, creating desirable, cool foggy morning weather, with diurnal temperature swings of 50 degrees.
