The grapes for this wine come from a hillside vineyard situated at 1,000-foot elevation comprised of rocky, sandy, alluvial soil that is ideal for growing Cabernet Sauvignon because of its permeable qualities.

AROMAS & FLAVORS

The Chairman Series 2017 Cabernet Sauvignon is deeply expressive with aromas of cherries, plums, and hints of dried tobacco. Mouthwatering fruit flavors are complemented by soft tannins for a rich and structured finish.

FOOD PAIRINGS

This lush and rich Cabernet Sauvignon pairs well with prime or short rib, roast beef, venison or pasta dishes with dark meat-based sauces.

HOW IT’S MADE

The 2017 vintage began with an early bud break followed by an extremely mild spring and summer season, perfect conditions for longer hang time and more intense flavor development. Harvest kicked off with our first pick on August 31 and extended to October 27th. All of our fruit is harvested in cool temperatures to ensure cold fruit at pressing.
